3 large bunches parsley (5 cups)
1 cup bulgur (cracked wheat)
1 cup boiling water
1/4 cup fresh mint
2 large tomatoes
4 green onions
1/c cup lemon juice
1/4 tsp pepper
1 1/2 tsp salt
1/4 cup olive oil

Directions:
Directions:
Add bulgur to the boiled water in a small bowl and mix. Place a tea towel over the bowl so the steam is unable to escape. Set aside until cool.

Finely chop the parsley, green onions, and tomatoes. Place them into a large salad bowl.

Whisk together lemon juice, pepper, salt and olive oil, and pour over the salad mixture. Add the cooled bulgur and mix well.
