8 fresh eggs
1 teaspoon water
Sea salt and cracked black pepper to taste
1 tablespoon Extra Virgin Olive Oil or Extra Light Olive Oil
Pinch of paprika
¼ cup crumbled feta cheese
¼ cup finely chopped fresh herbs, such as basil and thyme
¼ cup drained, chopped sun-dried tomatoes (optional)
¼ cup cooked, crumbled Sweet Italian Sausage (optional)
¼ cup finely grated Parmagianno Reggiano cheese

Directions:

Preheat oven to 375 degrees or covered outside grill to low-medium heat. Lightly stir eggs in mixing bowl moistened with water. Season to taste with sea salt, pepper, and pinch of paprika. Spread olive oil evenly around casserole dish or cake pan. Pour in half of seasoned eggs, and place in preheated oven for about 4 minutes. Remove pan from oven, and evenly spread feta cheese and chopped herbs (also tomatoes and/or sausage, if using) into uncooked top portion of eggs. Gently pour remaining eggs over mixture top and return pan to oven for another 4-6 minutes until eggs are set.
Optional: After eggs are set, remove from oven and evenly sprinkle grated parmesan on top. Place back in oven on broil setting, until cheese has melted and a light golden crust has formed. Let pan cool slightly, and then cut frittata into slices using a greased knife or pizza cutter. Remove slices carefully from pan with spatula.
