2c water or vegetable stock
1c quinoa, well rinsed and drained

2 large red peppers, halved and seeded
2 large green peppers, halved and seeded
vegetable or olive oil for spraying peppers and dish
1/2t cayenne pepper

2 1/2 T olive oil
1/2 medium onion, diced
1 carrot, diced
2 stalks celery, diced
1/2c shelled pumpkin seeds (optional)
2 cloves garlic, minced
1/2t cumin
1t chili powder
1t oregano
1t basil
salt to taste

Boil 2c water in medium saucepan. Add quinoa and simmer on low heat, covered, about 30min or until liquid has evaporated and quinoa is tender.

Preheat oven to 400ºF.

Spray casserole dish lightly with oil. Place pepper halves in dish, spray with oil and season with cayenne pepper and optional salt to taste. Bake for 15min.

Heat olive oil in large skillet or saucepan, and sauté onion, carrot, celery, pumpkin seeds, garlic, cumin, and chili powder for 3-4min, until vegetables are slightly softened and lightly browned. Add cooked quinoa, oregano, and basil, and sauté additional 1min, until blended well.

Fill each pepper half with quinoa stuffing. Add 1/2c water to casserole dish and cover with foil. Bake 20-25min, until peppers are tender.

delicious and beautiful. use a variety of bell peppers to increase visual appeal. extra stuffing does well on its own in a small glass dish - may bake with peppers or leave out. excellent leftovers.
