Catch the crawdads first. To clean , pull shell off the head and pull the middle tail out and then pull the legs off.

Drop the crawdads briefly into boiling water, then drain them well.

Roll them in cornmeal or flour that has been seasoned with salt and pepper. Drop them into hot deep fat fryer or frying pan, turning constantly. Cook for 10 to 15 minutes or until done.
