3/4 cup couscous
1 1/4 lb shrimp
1/2 cup chopped red pepper
1/4 cup chopped fresh parsley
3 T chopped fresh basil
2 T chopped scallions
2 T lemon juice
1 T olive oil
2 t lemon zest
1/2 t allspice
1/4 t salt; 1/4 t pepper

Directions:
Directions:
Cook couscous and set aside.

Boil shrimp for 3-5 minutes, drain and rinse with cold water. Coarsely chop and set aside.

Add shrimp and red pepper to cooled couscous. Combine parsley and all other ingredients. Toss with couscous and chill.
