2 lbs. Skinless, boneless chicken breasts
onion powder and lots of paprika
salt and pepper to taste
1 (14 oz.) can artichoke hearts, drained
½ lb. Fresh mushrooms, sliced
1 bunch chopped green onions
2 cloves garlic, minced
2 tbsp. light margarine
2 tbsp. Flour
2/3 c. chicken broth
3 tbsp. sherry (optional)

1. Season chicken heavily with onion powder, paprika and salt and pepper.

2. Place chicken in bottom of 3-qt. casserole.

3. Cut artichoke hearts and place around chicken.

4. Saute mushrooms, green onions, and garlic in frying pan coated with no stick cooking spray until tender. Place mixture on top of chicken.

5. In same skillet, melt margarine and add flour, stirring. Gradually add chicken broth and sherry, cooking until smooth. Pour sauce over all in casserole.

6. Bake, covered, at 350º for 1 hour. Remove cover, and continue baking for 15 minutes to brown chicken.
