3 c. all-purpose flour
1 tbsp. baking powder
1 tbsp. baking soda
1 tbsp. ground cinnamon
1 tsp. salt
1 1/2 c. butter
1 1/2 c. white sugar
1 1/2 c. brown sugar
3 eggs
1 tbsp. vanilla
3 c. chocolate chips
3 c. old-fashioned rolled oats
2 c. sweetened coconut
2 c. chopped pecans

Directions:
Directions:
Preheat oven to 350 degrees.
Mix flour, baking powder, baking soda, cinnamon and salt and set aside.
Beat butter until smooth.
Gradually beat in white and brown sugars for 2 minutes.
Add eggs, one at a time.
Beat in vanilla.
Stir in flour mixture.
Add choc. chips, oats, coconut and pecans.
Drop 1/4 c. dough onto ungreased cookie sheet.
Bake for 17-20 min., rotate cookie sheet halfway through baking time.
Makes about 3 dozen LARGE cookies.

This recipe honors my dear, sweet neighbor, Bubba. This was one of the recipes she often used to make the cookies she would serve to anyone that stopped by for some conversation and home cooking. Bubba and my mother-in-law, Mary Shemony, never met face to face, but had so very much in common. My favorite memories of both of these strong, awesome women include sitting at the table and sharing the food that they had so lovingly prepared.
