6 medium potatoes
1/4 c. butter or margarine
1 tbsp. cornstarch or gluten-free flour
1 tsp. salt
1/4 tsp. pepper
2 c. milk
2 c. shredded sharp Cheddar cheese

Directions:
Directions:
Preheat oven to 375 degrees.
Cut potatoes into thin slices.
Create a roux by cooking flour, salt and pepper in butter, stirring constantly over low heat until bubbly.
Remove from heat.
Stir in milk and cheese.
Heat to boiling, stirring constantly.
Boil and stir 1 minute.
Place potatoes in ungreased pan.
Pour cheese sauce over potatoes.
Cover and bake in 375 degree oven for at least 1 hour or until potatoes are tender.
