12 peppers
2 14-14.5oz cans broth (3 1/2C)
1 1/2C bulgur
1T olive oil
1 onion, chopped
3 cloves garlic, crushed
1lb ground beef
10oz frozen chopped spinach, thawed and drained
2 28oz cans tomatoes, crushed

Directions:

Cut tops off peppers, remove seeds and ribs, cut thin slice from base as necessary to steady.

Microwave for 8-9 minutes, removing tops halfway through. Drain.

Combine broth and bulgur and microwave 12-15 minutes or bulgur is tender and still slightly chewy and most of broth is absorbed.

Cook onion and garlic in oil for 5 minutes. Add beef and cook until browned. Drain if necessary.

To beef mixture, add bulgur, spinach and tomatoes. Fill peppers. Bake at 350º for 35 minutes or until heated through.
