2T vegetable oil
2 chopped onions
6 crushed cloves of garlic
2 4oz cans diced jalapeno peppers (usually omit)
2 4oz cans chopped green chile peppers
1T and 1t ground cumin
2t dried oregano
2t ground cayenne pepper
4 14.5oz cans chicken broth
6C cooked chopped chicken
6 15oz cans white beans
2C shredded Monterey Jack cheese

Heat oil in large saucepan over medium-low heat. Slowly cook and stir onion until tender. Mix in garlic, peppers, spices. Stir about 3 minutes. Mix in broth, chicken and beans. Simmer 15 minutes, stirring occasionally. Remove from heat and stir in cheese.
