Ingredients: 3/4 cup Jif creamy peanut butter 1/2 cup Crisco shortening 1 1/4 cup brown sugar, firmly packed 3 TBSP milk 1 egg 1 TBSP vanilla 1 3/4 cup flour 3/4 tsp baking soda 3/4 tsp salt White sugar

Directions:Preheat oven to 375º. Combine brown sugar, shortening,peanut butter, milk and vanilla in large mixing bowl. Beat on medium speed until well mixed. Add egg and continue beat until just blended. Stir together dry ingredients in medium bowl. Add to creamed mixture at low speed. Mix just until well blended. Shape dough into 1- 1 1/2" balls. Roll them in sugar and place 2" apart on greased cookie sheet. Flatten slightly with criss-cross tops using a fork. Bake, one sheet at a time, 7-8 minutes, until set and just begging to brown. Let cool on cookie sheet for 2 minutes, then remove cookies to racks to finish cooling. |

Notes: Mama said she used the recipe on the jar of Jif, 20 years ago. Since Jif is always in the cupboard at my house, I never wrote it down. Now, I have to assume that this is the recipe she used, or that they changed "her" recipe throughout the years. My absolute favorite, then and now. Same recipe Crisco publishes as "irresistible peanut butter cookie".
