3 Lbs potatoes (not Idahos, but thin skinned boilers)
1 large onion grated
1 tsp salt
2 eggs, beaten
1/4 cup peanut oil
5 T matzoh meal

Directions:
Directions:
Preheat oven to 350°F

Grease 9x7x2 inch pan (or 8x8)

Grate potatoes fairly fine. Squeeze and discard excess liquid. Put potato and onion in large bowl. Add salt, eggs and oil and mix well. Add matzoh meal to bind, not too dry or runny. Add more meal as necessary. Pour into pan and bake 1 hour. Run baked kugel under broiler for 2 minutes to crisp top.
