1 large pkg. vanilla pudding (cook & serve kind)
2 1/2 c. water
1 large pkg. orange Jell-O
1 med. sized can crushed pineapple (sweetened and drained)
1 small can mandarin oranges (in sections and drained) (additional can needed if desire to garnish)
1 pt. heavy cream (whipped and sweetened) (may substitute with 1 small container cool whip)
nuts (optional)
sliced banana (optional)

Directions:

Dissolve vanilla pudding in 1/2 cup water. Add this to two cups boiling water and boil for 2-3 minutes. Keep stirring, then add orange Jell-O. Stir until dissolved. Let cook until syrupy. Remove from heat and completely cool in refrigerator for 2 hours. Fold in crushed pineapple and 1 can mandarin oranges. Fold whip cream into Jell-O mixture. Garnish with nuts or fruit if desired. Bananas are good if it will be eaten same day. Serve chilled.
