For the dressing:
2 cloves garlic, minced, or to taste
1/4 cup freshly squeezed lime juice
1 1/2 tablespoons coarsely chopped cilantro leaves
2 tablespoon freshly grated ginger root
1 teaspoon coriander powder
1 teaspoon low-sodium soy sauce
1 teaspoon Gochujang (Korean chili paste)
1 tablespoon peanut oil
1 tablespoon sesame oil
1 tablespoon sugar

For the salad:
1 large seedless English cucumber, quartered lengthwise and coarsely chopped
1/2 red cabbage, shredded
2 carrots, shredded
4 scallion, white and light-green parts, coarsely chopped
1/4 tablespoons coarsely chopped cilantro
Roasted, salted peanuts, coarsely chopped, for garnish (optional)

Directions:

Whisk the dressing ingredients in the serving bowl.

Add the prepared vegetables and mix.

Garnish with the peanuts and serve.
