1 cup brown sugar
1/2 cup shortening - part butter
1 egg
1 tsp. vanilla
3/4 cup crushed pineapple, NOT DRAINED
2 cups flour
1 tsp. Baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup chopped nuts / raisins or both.

Directions:

Blend sugar, shortening and egg first. Mix in the rest of the ingredients, but don't over stir.

* Always make sure your Baking Powder and Baking Soda are fresh otherwise your cookies won't rise nice.

Spray Baking sheet. Drop by spoonful onto sheet.

Bake in 375 º oven for 12-15 minutes.
