2 c cooked macaroni.
2 1/2 t butter, divided
1 1/2 t all purpose flour
1 1/2 c milk
1/4 tsp salt
1/4 tsp pepper
1 1/2 c cheddar cheese
a few shakes of smoked paprika

Directions:
Directions:
1. Cook pasta according to directions. Drain; set aside.
2. Melt 1 t of butter in a small pan. Add breadcrumbs. Cook & stir until toasted, about 3 mins. Set aside.
3. In a med pan, melt remaining butter. Add flour. Cook over low heat, stirring constantly.
4. Cook, stirring constantly, until thickened. Stir in salt & pepper. Remove pan from heat.
5. Add cheese. Stir until cheese is melted. Stir macaroni into cheese sauce.
6. Spoon onto individual serving plates, then sprinkle with bread crumbs, paprika & scallions & serve.
