1 (9inch) sponge cake cut in cubes
1 cup seedless raspberry jam
8 oz fresh raspberries
10 oz heavy cream
3 egg yolks
3 tbsp white sugar
10 oz heavy cream
1/2 cup sliced almonds

Directions:
Directions:
Spread a little jam on each piece of cake and place in the bottom of a large glass bowl. Sprinkle raspberries over cake. Heat 10 oz of cream in med saucepan over medium heat. Beat egg yolks with the sugar until pale yellow and smooth. Strain yolk mixture into a clean bowl. Pour hot cream into egg yolks and stir vigorously. Return to pan on low heat and cook, stirring, until it thickens. Remove from heat and cool. Whip 10 oz cream until soft peaks form. Place almonds on a baking sheet and toast at 300ºF stirring frequently until golden (about 2 to 10 min). Spread cooled custard over cake in the bowl. Top with whipped cream and toasted almonds. Chill 2 hrs.
