1 c palm oil, melted
1 cup brown rice flour
1 cup almond flour or coconut flour
1/4 cup + 1 Tbsp arrowroot powder
1 tsp xanthan gum
1 tsp salt
1 tsp baking soda
1/4 cup erythritol
3/4 cup sucanat
2 flax eggs (2 Tbsp ground flax + 6 Tbsp water, whisked and thickened)
2 Tbsp almond milk
1 1/2 tsp vanilla
1 1/2 cup semi sweet chocolate chips

Directions:

Preheat oven to 375º

In a medium bowl, combine flours, arrowroot powder, xanthan gum, salt, and baking soda. Set aside.

Using a mixer, cream together melted oil and sugars.

Add the egg substitute, milk, and vanilla. Mix well.

Slowly incorporate the flour mixture until thoroughly combined.

Add the chocolate chips and stir to combine.

Chill the dough for about 1 hour.

Scoop big spoonfuls of dough and shape them into cookies on a baking sheet.

Bake for 11-13 minutes, until edges of cookies are starting to brown.

They will not look set, but will continue to cook on the pan. Remove from the oven and cool the cookies on the pans for 2 minutes, then remove to cooling rack.
