3 c. mashed sweet potatoes
1/2 stick butter
1 c. white sugar
1/4 c. milk
2 eggs

Topping:
1/2 stick soft butter
1 c. white sugar (can use 1/2 c. brown sugar and 1/2 c. white sugar)
1 c. chopped pecans
1/4 tsp. vanilla

Directions:
Directions:
Mix casserole ingredients together and put in an 8 inch square dish. Mix topping ingredients together, mixture will be crumbly. Sprinkle on top of the casserole ingredients. Bake about 30 minutes in a 300º oven. If it doesn't brown enough on top, you may turn the broiler on for just a few seconds. Make sure you watch as it doesn't take long to burn.

Canned sweet potatoes may be used for a shortcut. Place them in a pan, bring to a boil, then remove them from the stove and drain off liquid. Then add the ingredients mentioned above. If the potatoes are hot, the butter and sugar will mix together better.
