Brioche dough

1 pkg dry yeast
1 tbsp sugar
2/3 cup warm milk
4 large eggs
4 to 4 1/2 cups flour
1 /2 cup butter melted
2 tsp salt

Filling
8 tbsp Dijon mustard
8 slices Provolone cheese
8 smoked cheese sausages, large

1 tbsp water

Dough
Place the yeast and sugar in a mixing bowl and pour in the warm milk. Let stand until bubbly. Whisk in 2 eggs and 3/4 cup flour. Cover and let rise until trippled in size, about 1 hour.
Add the remaining 2 eggs, butter and salt, mixing well. Gradually add the remaining flour to make a soft dough. Let rise until doubled.
Line a baking sheet with parchment. Divide the dough into 8 and roll into a square, big enough to surround the sausage. Spread with 1 tbsp of mustard and 1 slice of cheese. Top with the sausage and roll up the dough. Brush with the egg wash and bake at 350 until brown, about 20 minutes. Slice to serve.
