Ingredients:  
4oz (100g) flour
4oz (100g) brown sugar
Grated rind of a lemon
4oz (100g) butter
1 egg - separated
Flaked almonds

Directions:
Directions:
Sieve flour, add sugar, lemon rind and butter and rub together.
Mix with the egg yolk and half of the egg white, knead lightly and press into a well greased cake tin (about 1/2' thick)
Brush with the remainder of the egg white and sprinkle with flaked almonds.
Bake at 350F for 30 minutes
Cool and cut in to slices or fingers while still in the tin.

Grandma B. was a great baker and always had baked treats in her tins in the kitchen cupboard. Grandpa Burslem had a sweet tooth and she loved to keep him well supplied.
