1 C. uncooked rice
1 14 oz. can tomatoes
1 medium onion, chopped
1 5-6" slice of ham, fried and diced
1 Tbsp. oil
salt and pepper to taste

Directions:
Directions:
Cook ham in oil. Remove and saute onion. Chop tomatoes and add enough water to make about 3 cups liquid. Add rice and bring to boil with all ingredients. Stir once and lower temp to low. Cover and cook 20-30 min.
