6 c. cooked rice, hot or cold
1/3 c. butter
1/2 c. finely chopped onion
1/2 c. finely chopped celery
salt and pepper
1 or 2 eggs, beaten
Soy sauce

Directions:
Directions:
In a large skillet or an electric skillet, saute the onion and celery in the butter on medium-high or high heat until tender. Add the cooked rice to the pan and work it into the butter and vegetables. Sprinkle salt and pepper to your taste. Allow the rice to fry and brown a bit before you stir or flip it. Let it fry for 15 to 20 minutes, stirring or flipping the rice 3 or 4 times during the frying. When rice has fried and browned sufficiently, pour on the beaten eggs and work it into the rice. Sprinkle with soy sauce to your taste while continuing to fry. Serve within a few minutes.
