1 1b beef (stew meat or cut up steak)
2 tbsp flour
Salt and pepper
2 tbsp oil
1 medium onion, coarsely chopped
1-2 cloves garlic, whole, peeled
2 large carrots, cut into 1" lengths
2 large potatoes. peeled and cut into bite-size pieces
1-2 bay leafs, (whole)
3-4 allspice berries

Preheat oven to 450º. Put flour, salt, pepper in to bag, add cut up beef. Shake to coat. Place meat and oil in an oven-proof pot. Brown in oven for about 4 minutes, then turn and brown other side. Add onions and garlic and brown for about 5 minutes more. Add carrots, potatoes, bay leaf and allspice berries and about 1-2 cups water. Cover and reduce temperature to 300º , cook for 1-2 hours until meat and vegetables are tender. Adjust water if necessary. Remove bay leaf, and garlic clove before serving. This could also be done in a slow cooker if you brown the meat first. I have also used an electric skillet.

This is my version of a stew that was served in restaurant in "Northwest Territory" at Marriott's Great America in California in the mid 1970's. The restaurant décor and menu were things that explorers or pioneers to Alaska might see, use or eat. Best served with a big hunk of Sour Dough Bread.
