Baked Zucchini Recipe

2 medium zucchini, cut into 1/4 inch slices
2 T butter, melted
1 T fresh oregano (or 1 tsp dried oregano)
1/4 cup grated Parmesan cheese
salt and pepper to taste

Directions:
Directions:
In a large bowl, toss the zucchini, butter and oregano. Arrange in a single layer on a greased baking sheet or shallow baking dish, sprinkle with Parmesan cheese.

Bake, uncovered, for 35-40 minutes at 350º or until golden brown. Season with salt and pepper.

You can use summer squash (or a combination of zucchini and squash) for this recipe. The kids like the squash a lot (Grandpa Coghill would be proud!!).
