Don't be fooled into thinking these are ordinary flat quesadillas. These are nothing like those. Make the flour tortillas as far as the rolled out stage, but don't bake them! Fill each with 1/4 to 1/3 c. Jack cheese. Fold the tortilla in half over the grated cheese and flatten it down gently with your hand. Carefully seal the edges by folding them up and in and press in and pressing the dough firmly. It should look like a turnover. Heat two inches of vegetable oil in a large pot on the stove until you get sizzling when dip a tip of a quesadilla into it. One at a time, fry the quesadillas in the hot oil, turning them soon to keep the upper side from puffing up and bursting. Fry until both sides are golden. Remove form oil and drain on paper towels. Serve soon with refried beans, salsa and guacamole.

These are fun to make but watch your oil as it gets very hot and if you don't have a good seal the cheese will leak and cause a big mess! Use two rubber spatulas to lift and turn so that you don't break your quesadilla.
