Chicken Enchiladas Recipe

8 tortillas
1/2 c. onion, chopped
4 cloves garlic, minced
1 t. ground coriander
1/4 t. pepper
2 T. butter
3 T. flour
8 oz. sour cream
2 c. chicken broth
4 oz. can diced green chilies
1 c. Monterey Jack, shredded
2 c. cooked chicken, chopped
sliced black olives
chopped tomatoes
sliced green onions

Directions:
Directions:
Saute onion, garlic, coriander, and pepper in butter.
Add flour, sour cream, chicken broth, and green chilies.
Cook and stir until thickened and bubbly.
Remove from heat and add 1/2 c. of cheese.
Combine chicken and 1/2 c. sauce.
Place 1/4 c. of filling in each tortilla. Roll and place in greased casserole dish. Repeat.
Pour remaining sauce over filled tortillas. Cover and bake at 350º for 35 minutes. Sprinkle 1/2 c. cheese on top and bake 5 more minutes.
Top with olives, green onions, and tomatoes.
