1 whole chicken
Favorite herbs
3-4 cloves of Garlic
2 tsp. salt

2 tbs. butter
2 tbsp. oil
2 carrots
2 stalks of celery
2 cloves of garlic
1/4 cup flour
6 cups of chicken stock
1/4 cup half and half
Pepper to taste

Dumplings:
2 cups of flour
1 tbsp. baking powder
1 tsp. salt
2 eggs
3/4 - 1 cup half and half

Directions:
Directions:
Mix your favorite herbs with 1/4 cup of olive oil and coat the chicken with the mixture. Make sure you get under the skin to season the meat. Cook the chicken for 1 1/2 - 2 hours, depending on how large the bird is, in the oven. When it is finished let it cool. After the bird has cooled shred the chicken and save the reserved bones to make chicken stock.
In a Dutch oven add the butter and oil. Add the carrot, celery, and garlic and saute until the veggies are soft. Stir in the flour. Continue to stir and cook for 2 minutes and slowly pour in the chicken stock. Let simmer until the sauce is thick enough to coat the back of a spoon. Stir in the half and half.
Add the shredded chicken and bring up to a simmer. Using 2 spoons, carefully drop heaping tablespoonfuls of the dumpling batter into the hot mixture. The dumplings should cover the top of the sauce. Let the dumplings poach for 10 - 15 minutes until they are firm ad puffy.

My grandmother never wrote down her recipes, but I would always help her make this recipe. I found this recipe on the Food Network website and have changed it to match my grandmother's. We have this the first freezing day of winter and several times throughout the season.
