2 T. butter
1/2 cup finely diced onion
2 chicken breasts, cooked and diced (1 lb.)
2 (15 oz.) cans chicken broth
1 (15 oz.) can pinto beans
1 (15 oz.) can white beans
1 (15 oz.) can hominy
1 (15 oz.) can white whole kernel corn
1(10 oz.) can tomatoes and green chilies
1 lb. processed cheese spread (Velveeta) - Benni uses the Cueso Velveeta - cubed

Directions:
Directions:
In a large pot melt the butter over medium heat. Add diced onion and saute for two minutes. Add cooked chicken, chicken broth, pintos, white beans, hominy, corn and tomatoes and green chilies. and mix well. Simmer for 30 minutes. Add cheese and reduce to low and cook 30 minutes.

Freezes well.
