1 ½ c. (3 sticks) butter, softened
1 c. sugar
1 egg
1 egg yolk
1 t. grated lemon rind
½ t. vanilla
3 1/3 c. very finely ground almonds or hazelnuts
3 1/3 c. unsifted cake flour
1 t. baking powder
1 t. cinnamon
Powdered sugar
Raspberry jam

Beat butter and sugar in large bowl with electric mixer until light and fluffy; beat in egg, egg yolk, lemon rind and vanilla. Stir in nuts. Stir in flour, baking powder and cinnamon, blending well to make stiff dough. Wrap in waxed paper; chill several hours or overnight. Cut dough in half, refrigerate other half. Roll out dough between sheets of wax paper (of lightly floured surface) to slightly less than ¼ inch thickness. With a 2 inch cookie cutter cut as many cookies as you can with the first half of dough. Repeat with the other half of the dough, cutting a 3/4 inch center of each cookie in this second batch. Bake for 12 minutes at 350, or until edges of cookies are golden. Remove sheets from oven, let stand 1 minute. Remove cookies with a wide spatula to wire racks. Cool. Heat raspberry jam in a small saucepan. Spread each of the solid cookies with a thin layer of jam. Top each with a cut-out cookie, press gently together to make a sandwich. Sprinkle cookies with powdered sugar. Spoon a dab of jam in the opening of each cookie. Makes about 4 dozen.
