1 Cup Peanut Butter
6 TBSP. Olive Oil
1 Cup Sugar
1 Cup Brown Sugar
2 Eggs, Lightly Beaten
1 TBSP. Vanilla
2/3 Cup Cocoa Powder
1 Cup All-Purpose Flour
1 tsp. Baking Soda
1/2 tsp. Salt

Preheat oven to 350. Lightly spary a cookie sheet with vegetable spray. In a medium mixing bowl combine sugar, brown sugar, coco powder, flour, baking soda, and salt. Set aside. Cream peanut butter, oil, sugar. Add eggs and vanilla, beat well. Combine dry ingredients to cream mixture. Mix until the dough is soft and crumbly. Roll into balls and flatten on the prepared cookie sheet. Bake 8 tp 9 minutes. Remove pan from the oven and let the cookies rest for 2 to 3 minutes. Then remove them to a wire rack to cool completely.
