1/2 cup dried bread crumbs (gluten free bread crumbs work too)
1/2 cup milk
1 lb of ground beef OR 1/2 lb ground beef and 1/2 lb ground pork
1/2 onion, grated
1 tsp salt
1/2 tsp freshly ground pepper
1/2 tsp ground nutmeg or allspice
2 tbsp butter or olive oil

Sauce
1 cup canned beef broth
1 tbsp all-purpose flour
2 tbsp water
1/2 cup heavy cream or half and half

Salt and freshly ground pepper to taste

1. In a medium bowl, soak the bread crumbs in the milk for 5 minutes. Add all the remaining meatball ingredients and mix well. Using your hands and dipping them into cold water occasionally, form the mixture into small firm meatballs about 1 inch in diameter.

2. Brown the meatballs in a skillet OR bake them in the oven on a rimmed baking sheet at 350F until done (about 20 minutes). Transfer the meatballs to a plate.

3. Sauce: If you brown the meatballs in a skillet, add the beef broth to the skillet, sitting to scrape up the browned bits on the bottom. Bring the broth to a boil.

4. In a small bowl, whisk the flour and water together to make a smooth paste. Add the paste to the boiling broth, whisking constantly. Reduce heat and simmer for 3 minutes, or until slightly thickened. Add the cream or half and half and simmer for 2 minutes. Season with salt and pepper.

5. Add the meatballs to the sauce and cook for about 5 minutes to rewarm. Serve the meatballs warm. If you have one, use a chafing dish for serving.

6. Can also serve meatballs with lingonberry sauce.

If I'm hosting a large dinner or party, I make the meatballs in advance and freeze them to cut down on preparation time. The meatballs are always a huge hit.
