3 pounds of yellow potatoes
5 garlic cloves
32 ounces of milk
1/2 tsp ground nutmeg
salt (as needed)
3 sprigs of thyme
1/2 tsp pepper
12 ounces of heavy cream
4 ounces of butter cut into small pieces
10 ounces of smoked gruyere cheese (grated)

Directions:
Directions:
1) scrub, peel and thinly slice potatoes (easier to use mandolin)
2) Add garlic to sauce pan with the milk and cream and bring to a boil. Season the milk mixture with the nutmeg, salt, pepper and thyme. Add sliced potatoes into mixture.
3) Bring the milk to a simmer and cook potatoes for 10-12 minutes (make sure the milk does not boil over). Discard the garlic cloves
4) Transfer 1/2 of potatoes (using a slotted spoon) to a casserole dish (lasagna style pan). Arrange potatoes in rows on bottom and cover with 1/2 milk mixture and sprinkle 4 to 5 ounces of gruyere cheese. Repeat for the second layer and dot the top with small cubes of butter
5) Bake at 375 degree uncovered for 45 minutes or until golden brown and the milk has been absorbed.
6) Allow potatoes to rest 10 to 15 minutes before slicing into servings
