Grandma Williams' Oatmeal Cookies Recipe

1/2 c. shortening
1/2 c. oleo
3/4 c. brown sugar
3/4 c. sugar
1 egg
1/4 c. water
1 tsp. vanilla
1 c. flour
1 tsp. salt
1/2 tsp. soda
1/2 tsp. cinnamon
1 tsp. baking powder
1-3/4 c. oats
1-3/4 c. coconut
1/2 c. pecans (optional but I use them!)

Directions:
Directions:
Preheat oven to 350º. Cream shortening, butter, and sugars. Add egg, water, and vanilla. In separate bowl, combine remaining dry ingredients. Mix sugar mixture and dry ingredients well. Bake for 12-15 mins.

NOTE: Can substitute 1 c. butter-flavored shortening instead of the 1/2 c. shortening and 1/2 c. oleo.

This is a wonderful cookie that I remember Grandma making often - I think it was her favorite cookie. One of my favorite memories is hearing my Grandma saying, "There are cookies in the cookie jar". She was the best Grandma ever!!
