Shrimp Scampi Recipe

4 TBL butter
2 TBL olive oil
1/2 onion, finely diced
4 garlic cloves, minced
1 pound large shrimp, peeled and deveined
1/2 c. white wine
2 whole lemons
4 dashes Tabasco
salt and pepper
8 oz. angel hair pasta
Fresh Basil, chopped to taste (can use dried)
Fresh Parsley, chopped to taste
1/2 c. grated Parmesan cheese

Boil water for pasta, begin cooking angel hair pasta until just done. Drain and reserve a cup or two of the water.
Heat olive oil and melt butter in large skillet over medium heat.
Add onions and garlic, cook for 2-3 minutes or until onions are translucent.
Add shrimp, then stir and cook briefly on each side - until the tails curl in.
Add wine, butter, lemon juice, salt and pepper, and hot sauce. Stir and reduce heat to low. Remove skillet from heat.
Add pasta and toss. Add a splash of pasta water if needed.
Top with grated Parmesan, parsley and basil to taste. Serve immediately.
