Pie:
1 graham cracker crust
3 Tbsp butter
cinnamon
1 whole egg / 2 egg yolks
1 c. sugar
3 Tbsp. flour
1 tsp. vanilla
2 c. milk

Meringue:
4 egg whites
4 T sugar
cinnamon to taste
1 tsp. vanilla

Directions:
Melt 3 Tbsp butter. Brush over crust. Brush plenty of cinnamon on bottom and sides of crust. Set aside.
Break 1 whole egg plus 2 egg yolks and beat with 1 c. sugar, 3 Tbsp. flour and 1 tsp vanilla.
Heat 2 cups of milk very warm, then in a double boiler mix milk and egg mixture and stir over med heat until thick. Stir constantly to prevent scorching. When thick pour into crust and set aside.
Beat 4 egg whites with 4 Tbsp. sugar, plenty of cinnamon to taste and 1 tsp. vanilla. Spread over pie. Bake in preheated 350 oven until light brown on top.
