1 pie crust

8 slices bacon, cooked crisp, drained on paper towel and crumbled
1/2 cup diced onion
1/2 cup diced green pepper (or mushrooms)
1 cup shredded sharp cheddar cheese (or swiss)
5 eggs
1 cup half and half
1 cup 2% milk
1/4 tsp salt
1/8 tsp pepper
1/8 tsp paprika

Directions:
Directions:
Heat oven to 425ºF.

Line 9" pie plate with pastry and crimp edges. Sprinkle with crumbled bacon, onion, pepper and cheese.

Beat eggs with half and half, milk, salt, pepper and pour on top of cheese. Sprinkle with paprika.

Bake for 15 minutes. Reduce oven temperature to 325ºF. Bake an additional 30-35 minutes, until knife inserted near centre of quiche comes out clean.

Allow to stand 10 minutes before serving.
