Bread slices
2 eggs plus 1 yolk
2/3 c. milk ( can use whole or 2% )
1/2 tsp. ground cinnamon
Butten to brown bread slices

Directions:
Directions:
Cut bread slices into 2 pieces (diagonally).

Heat 1 Tbl. butter in pan.

Meanwhile break eggs into a bowl, add milk and cinnamon. Combine well.

Dip bread slices quickly, then add to heated pan with butter.
Turn as they brown. Melt more butter as needed.

Serve with warmed maple syrup .

Ana Maria was our cook in Mexico City when we were children. She used to make this for us in the morning. I remembered watching her every morning! Yum… Can also use day-old croissants or other bread. Especially good with Panettone too !
