Ingredients: |
Ingredients: Cream together: 2 cups sugar 3 large eggs 1/2 lb. softened butter 16 oz. whole milk ricotta cheese 2 T vanilla
Mix together: 4 cups flour 1/2 tsp. salt 1 tsp. baking powder
Frosting: 4 oz. softened cream cheese (DO NOT USE FAT FREE OR LOW FAT) 2 tsp. melted butter 2 cups confectioners sugar 1/2 tsp. vanilla Blend above ingredients well until smooth and frost.
Sprinkles and jimmies for decorating frosting.

Directions:Add dry ingredients to wet ingredients and mix well. Batter is very sticky! Handles easier if mixed and refrigerated overnight.
With wet hands, roll and drop by small tablespoons onto lightly greased cookie sheet. Cookies do not spread so may be placed fairly close together.
Bake @ 350 degrees F for 9 to 12 minutes. Cookie remains white looking. Only bottoms will brown slightly so base cooking time on your own oven heat. Cool completely on racks. Frost and sprinkle as needed. Cookies keep for several weeks unfrosted in tightly sealed container in refrigerator. |
