2 cups sugar
1 cup buttermilk
1/2 teaspoon baking soda
2 or 2 1/2 cups pecans

Use a large and thick pot. The candy need a lots of room to bubble but we don't want it to boil over.

Pour two cups of sugar and one cup of buttermilk and 1/2 teaspoon of baking soda. Stir the mixture until the sugar is completely dissolved, then place the pot on low to medium heat and let boil to a soft ball stage, stirring constantly. Soft ball means dipping a little in cold water. If you can form the syrup into a soft ball with your fingers, it is ready. Remember, stir the mixture constantly. You don't want it to burn. The mixture will turn a brownish color but don't worry. It's supposed to.

Once the soft ball is reached, remove from the stove, then add 2 or 2 1/2 cups of pecans. Beat the mixture briskly until it becomes glossy and starts to get very thick.

Quickly spoon it on wax paper, making little patties.
