1 cup butter or margarine
1/2 cup unsifted powdered sugar
2 tsp. cold water
1 tsp. vanilla.
2 cup cake flour
1 cup finely chopped nuts (I use pecans)


Directions:
Directions:
With an electric mixer, beat butter until creamy. Beat in powdered sugar. Blend in cold water and vanilla.
Gradually mix in flour, blending well. Stir in finely chopped nuts. Cover and chill dough until firm.
Using about 2 tsps. for each, shape dough into balls. Place slightly apart on ungreased baking sheets. If dough becomes too soft, chill until firm again.

bake in the middle of a 325º oven until bottoms are golden, about 20-25 minutes. Transfer to wire racks to cool.

In a bag filled with about 3/4 cup sifted powdered sugar, gently shake a few cookies at a time to coat evenly with the sugar. Package airtight to store. Makes about 3 dozen.

These cookies are also known as Mexican wedding cakes. The original recipe called for walnuts, but I prefer pecans. It's also best to use real butter!
