1 1/2 cups sugar
1 cup buttermilk
1/2 cup biscuit mix (Bisquick or Jiffy)
1/3 cup (5 1/3 Tbsp.) butter, melted
1 tsp. vanilla extract
3 eggs

Directions:
Directions:
Preheat the oven to 350º F. Grease a 9" pie pan. Put all the ingredients in a bowl and blend for 1 minute with a hand mixer. Pour the mixture into the prepared pan. Bake for approximately 50 minutes or until a toothpick inserted into the center comes out clean. Cool for 5 minutes.
