Ingredients: 1 1/2 c. all purpose flour 2 Tbs. shortening 1 c. cold water 1 whole chicken

Directions:Cut shortening into flour until it looks like coarse meal. Add the cold (never hot) water the flour until a good, soft dough forms. Divide the dough into two parts. For each part: roll the dough out on a well floured pastry cloth until it is very thin. Cut the dough into strips -- not too long -- and drop into simmering chicken broth.
To prepare the chicken broth: Cook the whole chicken in a well seasoned broth. Strain out any vegetables or solids. Remove the chicken and cut the meat into bite-sized pieces. Reduce the broth until you have about as much as you want. ( I realize this step is subjective --see notes below) For a richer broth, gradually add a little milk to the broth while it is simmering (never while boiling). Return the chicken pieces to the broth and bring back to a strong simmer. Add the dumplings a few at a time. Cook until the dumplings are tender. Serve with biscuits or cornbread and butterbeans. |

Notes: This just takes practice. I had to follow my grandmother around her kitchen a take handfuls of flour and soup spoons of shortening out of her hand and measure then in order to get a "recipe" for the dumplings. As far as cooking a chicken, you can figure that part out. By the time we got to the magic mixture of broth and milk, she was pretty sick of me, and I got put on some sort of vegetable duty, so I've just practiced that over time. After 25 years of marriage Drew says I'm making progress.
