2 cloves garlic
3/4 tsp salt
2 tbsp. olive oil
1 tsp black pepper
1 lb centercut beef tenderloin

BearniseSauce

2 tbsp. tarragon vinegar
2 minced shallots
1 tbsp. dry white wine
1 tbsp. fresh tarragon or 3/4 tsp. dried
3peppercorns , cracked
2 egg yolks
1/2 cup butter, melted
pinch salt & pepper
1 tbsp. fresh parsley

Directions:

Rub Meat with garlic, salt, oil, pepper

Let stand 30 min. - Sear on all sides till browned
Roast 500F oven
Rare 8 to 10 min.
Medium 12 min
Cover with foil

Bring shallots, vinegar, wine, 2tsp tarragon & peppercorns
to boil - reduce heat- simmer till reduced by half
Put in double boiler - whisk egg yolks - slowly drizzle in butter
Strain into clean bowl - add hot water if too thick - stir in
remaining tarragon & parsley
