2 1/2 C all-purpose flour
12 T butter, softened
3/4 C granulated sugar
2 eggs, at room temperature
pinch salt
apricot preserves (can substitute other flavors if you prefer)
powdered sugar

Directions:
Directions:
Mix all ingredients by hand on a floured surface, kneading gently and being careful not to over mix. When dough no longer sticks to your fingers, roll into a ball and let rest 10-15 minutes at room temperature.

Preheat oven to 350 degrees. Cover a cookie sheet with parchment paper.

Roll out the dough and use a shot glass or a small round cookie cutter to cut out cookies. If you'd like, use a metal thimble or other small round object to cut out a small hole in the center of half the cookies.

Bake 6-7 minutes, or until the cookies are light brown on the edges.

Transfer cookies to a rack to cool for at least a couple hours. Coat half the cookies lightly with apricot preserves, then top the cookies with the remaining half to create cookie sandwiches.

Put on a platter and leave uncovered overnight. Gently dip the cookies in powdered sugar to barely coat the tops and bottoms. Store covered with plastic wrap.
