½ cup raisins
¾ cup fresh orange juice
¾ cup oil
1 cup brown sugar
1 cup white sugar
2 eggs
2 cups flour
½ tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp vanilla
1 cup quick oats
2 cups cornflakes
1 cup flaked and sweetened coconut

Directions:
Directions:
Soak raisins in orange juice and heat over low heat for 15 minutes. Combine oil, sugars, eggs and mix until smooth. Add dry ingredients and stir until well mixed. Add plumped raisins. Grease cookie sheet. Drop dough by tsp. Cookies will spread slightly. Bake 8-10 minutes at 350˚F. Makes 108 – 2” cookies.
