2 eggs
¾ cup sugar
½ cup vegetable oil
1 cup mashed overripe bananas (about 3)
2 cups flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
chocolate chips or nuts -- optional

Directions:
Directions:
Preheat oven to 350˚F. Grease and flour a 1.5 L loaf pan. In a mixing bowl, combine eggs, sugar, oil, and bananas. Beat until thoroughly blended.

In a small bowl, mix together flour, baking powder, baking soda, and salt. Add to egg mixture and stir until combined.

Pour into prepared pan and bake for 55-60 minutes, or until tester inserted in centre comes out clean. Let cool in pan for 5 minutes, then loosen edges with knife, and turn bread out onto rack to cool.
