Note: these are meant to be teething biscuits, but I really like them as a little softer version of biscotti. Nobody has to know they’re for babies!! They’re a great, healthy snack, and I eat as many as the kids do.

¼ cup brown sugar 2 tsp baking powder
½ cup oil ½ tsp baking soda
2 eggs
1 cup mashed banana
1 ¾ cup flour (can combine white and whole wheat)

Directions:
Directions:
Combine all and stir only until smooth. Pour into a greased loaf pan. Bake about 1 hour, or until firmly set, at 350˚F. Cool completely, remove from pan and cut into long slices, and then into sticks (like biscotti). Set on a cookie sheet and bake at 150˚ until crunchy (overnight is fine).
