½ seedless cucumber, chopped
1 tbsp chopped garlic
6 tbsp rice vinegar
salt and pepper
1 tsp concentrated chicken stock
1 ¼ cup boiling water
1 cup couscous
2 tomatoes, chopped
3 tbsp fresh mint
½ cup fresh parsley
¼ cup chopped red onion
¼ cup olive oil

Directions:
Directions:
In bowl, mix cucumber, garlic, ¼ cup rice vinegar, salt and pepper to taste. Let sit 30 minutes. In another bowl mix concentrated chicken stock and boiling water. Stir in couscous. Let rest 5 minutes. Refrigerate until chilled.

To couscous, add cucumber mix, tomatoes, mint, parsley, onion, olive oil and 2 tbsp vinegar. Toss. Chill until ready to serve.
