7 medium carrots, peeled and roughly cut
1 medium onion, diced
1 knob of ginger, peeled and crushed (should be about ¼ cup)
1 tsp black pepper, crushed
1 bay leaf
3 cups chicken stock
1 ¾ cups cream (35%)

Directions:
Directions:
Sauté carrots and onion in vegetable oil until the onions are translucent. Add chicken stock, pepper, and 1 cup of the cream. Simmer until the carrots are al dente. Add ginger and continue cooking for about 10 minutes. Puree in blender until very smooth. Strain if desired. Reheat with remaining cream and season to taste.
